Ingredients

1⁄3 cup almond flour
1⁄3 cup sunflower seeds
1⁄3 cup pumpkin seeds
1⁄3 cup flaxseed or chia seeds or linseed
1⁄3 cup sesame seeds
1 tablespoon ground psyllium husk powder
1 teaspoon salt
1⁄4 cup melted coconut oil
1 cup boiling water

Note: For a simpler version you can buy a pre mixed “seed mix” from Source
Bulk Foods. If this is available to you then simply add 1 cup off water to 2 cups
of seed mix and let stand until it thickens. Then follow the same steps below.

Method

Preheat the oven to 50°C (120°F). Mix all dry ingredients in a bowl. Add boiling
water and oil. Mix together with a wooden fork. Spread out the dough thinly on
a baking sheet lined with parchment paper. Bake for about 6 hours, check
occasionally and when sufficiently dry, turn the cracker over and peel off the
parchment paper and allow to finish drying out.

Turn off the oven and let them completely dry.

Note: A hotter oven can be used for shorter cooking time, 160°C for
approximately 10-15 minutes both sides.

Almond flour may be substituted with sesame seed flour if you want to make the crackers nut free.

For flavour variations add 1 teaspoon of your favourite spice, such as cayenne
pepper, smoked paprika, ground cumin, or fennel seeds.

Health Benefits
Seeded crackers offer a good blend of both omega 3 & 6 fatty acids, along with
dietary fibre.
